TOTAL YEARLY PRODUCTION: 50.000 bottles.
PRODUCTION AREA: Varied vineyards situated on the hills in the town of Gattinara.
GRAPES: Nebbiolo 90% - Bonarda and Vespolina 10%.
YIELD PER HECTARE: 40/48 hl.
AGEING: Minimum ageing 3 years; 2 years in Slavonian oak casks, 1 year of refining in bottle.
ALCOHOL CONTENT: 12,5%.
COLOUR: Garnet coloured, turning to a brick shade.
BOUQUET: Vanilla with scents of berries, tobacco and mixed berries.
FLAVOUR: Full bodied and harmonic, with typical bitter aftertaste.
TASTING TEMPERATURE: 18 - 20°C.
STORAGE: Bottle has to be stored horizontally, in a dry place, avoid light, vibrations and heat; storage temperature 12 - 15°C.
TO BE SERVED WITH: Excellent with beef, game, fermented cheese and risotti; it is a perfect wine after meal and for meditation.


VINIFICATION: Grapes are harvested only in perfect health conditions and when full ripening has been reach. The Grapes are destemmed without crushing the raisins and then pressed gently. Fermentation is carried out at controlled temperature in oak vats for 12/15 days with several pump over per day for the best colour extraction.

 

This is a Wine of great tradition, made from best grapes, selected among the vineyards owned by NERVI. The ideal position of the vineyards and the composition of the soil as well as the modern wine-making technologies, contribute to the production of this great wine, harmonic and balanced with a distinctive and complex bouquet.
